Bring On the Luck with a Big Bowl of Hoppin John

Legend goes that a belly full of Hoppin’ John on New Year’s Day will bring you good luck all year. Maybe it’s the Southern in us—technically we are south of the Mason Dixon—but we’re buying it. This New Year’s let’s cook up a pot of luck for the whole family…

Ingredients
1 Tablespoon Olive Oil
1 can Black Eyed Peas, drained
1/2 Red Bell Pepper, chopped (you can also do green but red makes the dish more colorful)
2 bunches Collard Greens (or Kale if you can’t find Collards)
1 medium Onion, chopped
1 quart Chicken Stock
2 links Chicken Andouille Sausage, cut up
1 Cup Rice
Salt + Pepper

1. Chop up your veggies.
2. Heat up your olive oil over medium heat in a big ol’ pot. Cook the onions and peppers until soft.
3. Add sausage. Fry it up for a minute or two.
4. Dump in your black eyed peas, stock, greens and rice. Season with salt and pepper.
5. Bring to a boil. Reduce heat. Cover.
6. Cook until rice is soft (about 20 minutes).
7. Plate it up and put it in your belly.

Now feel lucky all year. Happy New Year!
