Cooking | Easy Side Dishes for Everyone

I have picky eaters. Sometimes it makes cooking a drag. Okay, I’ll be honest, lots of times it makes cooking a drag. But I have learned one simple, easy, and healthy way to get veggies into my kids—roast them.
All you need is a vegetable of your choice, a little olive oil and a pinch of salt. Here are four of our favorites.

You’ll need:
peeled carrots
1-2 Tbs olive oil
salt to taste
Place peeled carrots in a pan. Drizzle them with olive oil and salt. Rub your hands through them to get the olive oil and salt evenly distributed. Bake at 425 for 20 minutes or until you can stick a fork in them.

You’ll need:
green beans
1-2 Tbs olive oil
salt to taste
Place green beans in a pan. Drizzle them with olive oil and salt. Rub your hands through them to get the olive oil and salt evenly distributed. Bake at 425 for 20-25 minutes or until they start to crisp up.

You’ll need:
diced potatoes (try to cut pieces evenly)
1-2 Tbs olive oil
salt to taste
Place diced potatoes in a pan. Drizzle them with olive oil and salt. Rub your hands through them to get the olive oil and salt evenly distributed. Bake at 425 for 30-35 minutes. Occasionally check on them and move them around in the pan so they brown evenly.

You’ll need:
peeled and diced sweet potatoes
1-2 Tbs olive oil
salt to taste
Place peeled and diced sweet potatoes in a pan. Drizzle them with olive oil and salt. Rub your hands through them to get the olive oil and salt evenly distributed. Bake at 425 for 30 minutes.
So easy, right? Have you ever tried roasting? I think it’s totally saved my sanity. I actually think it’s the hidden secret of cooking—most things taste good roasted. And roasting is one of the easiest ways to cook. Seriously, anyone can do it. Throw it in the oven, check on it once or twice and you’re pretty much set.
