Cooking | Scrumptious Coconut Macaroons
During the holiday season things tend to get hectic. Because of this I like to make these tasty coconut macaroons. They are super simple to make, everyone loves them and they are very popular at bake sales since they are gluten and dairy free.
2.5 cups of unsweetened coconut
¾ cups of sugar
2 egg whites
5 teaspoons of vanilla extract
Dark chocolate or powdered sugar (optional)
1. Preheat oven to 350.
2. Mix all ingredients in a medium sized bowl with a wood spoon. Make balls or little mounds with about 2 tablespoons of the coconut mixture and place on parchment covered baking sheet – about inch apart. Bake 12-15 minutes until edges are golden.
3. If using chocolate, melt in microwave in 10 second intervals. Make sure to stir in between so chocolate won’t burn. Once you get the liquid consistency, drizzle on baked cookies with a spoon or for prettier and more precise drizzle lines fill chocolate into a piping bag or plastic bottle and drizzle over cookies.
4. If using powdered sugar, dust cookies lightly right before serving.
Makes about 18 cookies.
