Kids Need to Eat More Veggies? Try Zucchini Noodles with Marinara Sauce

According to the CDC 9 out of 10 American kids don’t eat enough veggies. Now, I’m not going to moan about kids these days or parents these days, I’ll leave that for the rest of the internet to do. Instead, toady let’s share a delicious recipe for getting our kids to eat more veggies—zucchini noodles with marinara sauce.

You’ll need:
4 to 6 Zucchini
Marinara sauce – either homemade or from a jar. We’re not judging.
Spiralizer

how to make zucchini noodles

1. Heat marinara sauce in a pan over medium-low to medium heat.
2. While the sauce is warming, wash the zucchini.
3. Now look at the Spiralizer. You’ll notice it has two cones/sides. One produces angel hair sized noodles; the other wider spaghetti sized ones. Use the spaghetti side. Although, feel free to experiment to see which you prefer.
4. Insert the zucchini, bottom side first, into the Spiralzier. Now turn. Make sure you add a little pressure as you turn to get those nice long noodles.
5. Once you have a mound of tasty noodles, top it with marinara sauce and enjoy.

See, so simple. While my kids are older and can make this dish on their own, even preschoolers can help out. Have them wash the veggies or let them try a few turns in the slicer with your help.
